Baptism Day!

We had a great weekend!  It was baptism day for Ryan and Katelyn.  A lot of friends and family came to share this special occasion with our family.  Aunt Bec french braided Kate's hair so it wouldn't float.  I don't do well with french braids.  We are glad that Aunt Bec was willing to take the time and do this for us.

Here Ryan is with his Dad.  Ryan likes pictures still.  At least one of them is smiling.  I think Wes was a bit nervous.  It had been since Riley was baptized that he had performed the baptism ordinance.  Apparently it isn't like riding a bike.  We had a few chuckles when Ryan wasn't sure how to hold his hand to pinch his nose.  Wes was so nervous he had forgotten too!  He did a really great job baptising the two of them.  I am very grateful and feel very blessed that he is a worthy priesthood holder and he can do these important things for our family.  I am so proud of him.  I teased him later that he touched the bottom  of the font with Katelyn.  He said that he did that on purpose so her hair didn't float up!

When I was helping Katelyn change for her confirmation, I looked at her and she was smiling so cute.  I asked her how she felt, to which she replied "wet!".  I'm not sure what I expected her to say...maybe something a little more spiritually enlightening?  We hurried as fast as we could so everyone wouldn't be waiting on the girls for the confirmations.  We ended up waiting at least another ten minutes for Ryan and Wes.  The boys in our family are definitely on Deweyville time!  I am proud of Ryan and Katelyn and their decision to be baptized and become members of the church.  It was a sweet moment for me as a Mom to have our youngest ones take this big step.  Funny though, it took two minutes in the car on the way home for Ryan to start picking on Katelyn and make her scream.  Fleeting moments of bliss...

Afterwards, everyone came to our house for taco salads.  They were pretty good.  I tried a new recipe for shredded taco chicken.  It was way easy and super yummy.  I promised a few people I would share so here it is:

Crockpot Chicken Tacos
2 lbs. boneless chicken breasts- I used them frozen.
16 oz. jar of medium heat salsa
6 garlic cloves- rough chopped
2 serrano peppers- seeded and rough chopped
1 lg jalapeno pepper- seeded and rough chopped
1 packet taco seasoning- I used Ortega
1 C water

Place all in a crockpot and cook 10 1/2  hours on low temperature.  Shred chicken with two forks.

Note: I always put foil over the crock before putting the lid on, it seems to hold the moisture better.  I also checked and added an additional 1/2 C water after about eight hours.  Also, an easy way to seed the peppers is to cut them in half lengthwise and then use a teaspoon to scrape out the ribs and seeds in one easy scoop!
